Smoked haddock and colcannon

 Ingredients for Haddock

  • 2 smoked haddock fillets
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup chives(chopped)
  • 1/4 cup chopped parsley

 Ingredients for Colcannon

  • 4 potatoes
  • 1 cup butter
  • 3 cups chopped cabbage
  • 3 large green onions
  • 1 cup whole milk

Method for Colcannon

  •  Start by making the colcannon
  • Take a large Saucepan
  • Add chopped potatoes and cover with water, place the pan on a medium flame and bring to boil. Cook the potatoes until the potatoes are tender
  • Drain the water and palce the potatoes on the side.
  • Place the pan on the flame and add butter, once the butter is hot add the cabbage and cook for 5 minutes
  • Now add the onions and cook for additional 2 minutes
  • Add whole milk and mix well
  • Add potatoes and mix well
  • Add salt to taste and top off with some butter
  • Add half the chives to the colcannon and mix well

 Method for Haddock

  •  Start by taking a baking dish
  • Place the Haddock Fillets on the dish, and pour milk over the fillets
  • Place in the oven and bake for 7 minutes @ 375F or until the fillets flake easily
  • Take a sauce pan, fill it half with water and poach the eggs in it for 2 minutes, ensure that the yolk is still soft
  •  Take a plate, add colcannon, place the haddock fillet on the colcannon and top with poached egg
  • Garnish with chives and parsley
