Irish Roast Pork with Potato Stuffing

Ingredients for the pork

  • 2 lbs Pork
  • 2 tbsp butter
  • 2 tbsp cider

Ingredients for the Potato Stuffing

  • 4 1/2 cups mashed potatoes
  • 1/4 cup butter
  • 1 large onion
  • 2 large apples
  • 1/2 cup chopped sage and thyme
  • Salt and pepper to taste

Preparation for the stuffing

  • Take a mixing bowl
  • Add mashed potatoes
  • Chopped onions, chopped apples, herbs, butter and salt and pepper and mix well

Preparation of the Pork

  • Take the pork
  • Rub salt and pepper on the meat , coating the meat well and rubbing the salt into the meat
  • Take large baking dish and add cider to the dish
  • Place the meat on a flat board, place the stuffing in the center of the meat and roll the meat into a roll, use string to tie it up.
  • Place the meat roll in the dish
  • Cover the dish with foil and place in the oven to bake for 1 hour @ 375 F
