Irish Dumpling Stew

Ingredients for the stew:

  • 4 Potatoes
  • 2 pounds beef
  • 1/2 cup flour
  • 2 large onions(minced)
  • 2 carrots(chopped)
  • 2 tomatoes(skinned and chopped)
  • 1 clove garlic(minced)
  • 1 large bunch of mixed herbs
  • 2 cups broth
  • Salt and pepper to taste

Ingredients for dumplings

  • 3/4 cup self raising flour
  • 1 cup bread crumbs
  • 1 tbsp mixed herbs
  • 1/4 cup shortening
  • 1 egg
  • 1 cup broth
  • Salt and pepper to taste

Method for the stew

  • Start by taking a pan and placing it over a medium flame.
  • Coat the meat well in flour and place in the pan along with a little oil, allow the meat to brown well
  • Add onion, garlic, potatoes, carrots and tomatoes and sauté along with the meat
  • Take a large Saucepan, add meat and vegetables  along with tied herbs.
  • Add the broth to the pan and allow the meat to cook for 2 hours.

Method for dumplings

  • Take a large mixing bowl
  • Add flour, bread crumbs and herbs and mix well
  • Add shortening to the flour mix and mix well
  • Add egg to the mix and mix well
  • Take a large pan, fill it with water until half full
  • Take the dough, make small balls of dough with your hand and drop them in the water
  • Allow the dumplings to cook for 20 minutes

Once the dumplings are cooked, add the dumplings to the stew and allow the stew to cook for another 20 to 25 minutes.
